To produce a wine of character, the grapes must be tasty. All our intervention go in that direction.This way of cultivating is obviously not compatible with mass production and high yields. However, we are proud to cut healthy grapes, with a well-balanced taste, that are prone to produce a wine of high quality.
After total discarding of the grapes, the harvest is made into wine during 20 to 40 days in traditional thermo-regulated vats.
All the varieties of grape are fermented separately, since each variety has its own features, its own aroma and its specificity :- The Caladoc and the Cinsault yield warmth and mellowness.
- The Merlot, Syrah and Cabernet exhibit a certain sturdiness, longevity, colour and a straight taste.
- The Mouvèdre, the Pinot yield specific bouquets of aroma.
Once the fermentation process is finished, each type of wine is tasted in order to create a unique vintage.
This task demands precise skills, since the taster determines the quality and originality of the wine by mixing different ratios of grape varieties.The wines are then selected. Some will be aged in oak barrels over 18 months. This ageing process will only be disturbed when the wine is drafted.
The wine prepares, ages and evolves until the day we judge most favorable to proceed to bottling at the estate.
